Dinner Time: Let’s Talk Turkey Meatloaf

Meatloaf is the perfect comfort food for a cold February night. Eat it guilt-free by using ground turkey instead of beef.

TURKEY MEATLOAF

  • 2 pounds ground turkey
  • 1 cup of Italian or plain bread crumbs
  • 1 cup of shredded mozzarella cheese (reserved) 3-4 cloves minced garlic
  • 2/3 cup tomato sauce (can substitute ketchup for a tangier taste)
  • 3 medium sized eggs, slightly beaten
  • 2 tablespoons of pesto


Preheat oven to 350 degrees. Mix all ingredients (except cheese) in large bowl. Mold meat mixture into a loaf form on a 9 x 13 baking dish. Form a spot in the middle to add cheese. Once cheese is added, gently reshape loaf so that the cheese is "stuffed" in the center. Bake at 350 for an hour. Slice into 8-10 large servings. This recipe can easily be halved, or make two small loaves and freeze one.

Tips from Krina: “I usually serve with a side of pasta tossed with pesto sauce and asparagus (one bunch trimmed, drizzled with olive oil, kosher salt and pepper in oven for 10 min at 400). Also, if there are nut allergies, omit pesto from meatloaf and pasta and use a little dried basil.”
