You don’t need the luck of the Irish to create a delicious meal this St. Patrick’s Day—just a delicious recipe from Bridie McKenna’s.
Bridie McKenna’s Dubliner Chicken
4 chicken breasts
4 slices Dubliner cheese
8 strips cooked smoked bacon
salt and pepper to taste
2 tablespoons of canola oil
Pound out chicken between waxed paper until it is flat (1/4-inch thick), shake salt and pepper on chicken breasts, and place a Dubliner cheese slice on each flattened chicken breast. Layer two strips of cooked smoked bacon on top of cheese. Roll chicken and place two or three toothpicks through chicken to hold. Heat oil in sauté pan and place chicken in pan. Fry for four minutes on each side and finish in 500 degree oven for an additional four minutes. Place chicken on plate with your favorite mashed potatoes and a side of colorful steamed veggies.
Wine and Cream Sauce
1 cup Pinot Grigio
2 tablespoons of Irish butter
1 cup heavy cream
salt and pepper
Reduce white wine for one minute and add heavy cream. Boil for three minutes while stirring constantly. Add butter until melted. Salt and pepper to taste. Pour over chicken. Serve with a slice of pretzel bread and your favorite Irish beer.
